"Three-Yellow" Chicken, a breed known for its triumvirate of yellow skin, feet and beak. J's Bar Bistro's Chef put various of herb into the chicken and buttery it with over 24 hours. The coverage of butter can keep the chicken skin in a moisture status. After 24 hours, Chef roasts it crisply and finally smoke it with the apple wood to add the additional flavor.
